Yes. Please try logging into 'Ubuntu on Wayland' and tell us if it hits
the same issue eventually.

More interruptive but also useful to know, please try other desktop
environments like:

  sudo apt install unity-session
  sudo apt install xfce4-session
  sudo apt install cinnamon-session

and then you can select which one on the login screen.

Are there any tests I can do?

Tried a few different blue tooth mouses - same result.
Slowed the mouse speed, changed screen resolution - same result.
Can't find a pattern as to what triggers this - sometimes heavy usage, some 
times very little.

I'm happy to run any diagnostics - if we can't resolve this I will have
to look at getting a different hardware but would like to keep using
this if we can resolve it.

I am running Ubuntu 20.04 on a new ThinkPad P14s AMD. I noticed that my
trackpoint was very laggy and choppy.

After a while I realized that the trackpoint is smooth as long as I am
not touching the trackpad (very difficult). Even with the trackpad
disabled in GNOME and the BIOS (which seems to only affect Windows) the
interference continues. Using the command "libinput debug-events" I can
see "POINTER_MOTION" events being registered despite the trackpad being
off. This seems to be what is causing the trackpoint lag.

Disabling the trackpad in the BIOS does not help. I have the same
behaviour on a 21.04 live USB session.

help us find the cause of the crash please follow these steps:

1. Look in /var/crash for crash files and if found run:
ubuntu-bug YOURFILE.crash
Then tell us the ID of the newly-created bug.

2. If step 1 failed then look at https://errors.ubuntu.com/user/ID where
ID is the content of file /var/lib/whoopsie/whoopsie-id on the machine.

But it seems to be nvidia, but may be a  workaround is possible in Ubuntu?
This bug prevents me to use Linux for daily docking /undocking cycles for 
HomeOffice (works fine with Windows).

I have exactly the same issue and can't use Linux for Home office: daily 
docking/undocking cycles:
See bugreport [1] Linux for HomeOffice - Sporadic X11 crash when 
docking/undocking "Failed to enter VT"

Most recent Ubuntu 20.04LTS and KDE Plasma version
Dell Precision 15" 7540, Xeon E-2286M@2.4GHz, 128 GB ECC RAM, NVIDIA Quadro RTX 
5000 16GB VRAM
Dockingstations at Home and Offices: WD19DC (240W)
Monitors used for Linux migration Office1: 2x 4K U4320Q, 42.5" @ 96dpi font / 
No scaling a
Monitors used for Linux migration Office2: 2xU3818DW, 37.5"
Monitors used for Linux migration at home: 3x FullHD Dell monitors
