Those stack traces in the log are unfortunately likely unrelated to any
gnome-shell freeze. And I assume the freeze is the main issue that
you're reporting(?).

Please start by uninstalling these extensions:

  'mediapla...@patapon.info'
  'system-moni...@paradoxxx.zero.gmail.com'

reboot and then tell us if the problem goes away.

Please also clarify what the problem is exactly. Is it a full screen
freeze?
