That's something you would have to configure on the remote desktop server 
side. For Windows Remote Desktop Connection for example, you would open the 
application, go to the options, go to the 'Display' tab, and uncheck 'Use all 
monitors for the remote session' (and do that for all machines via a policy I 
guess).

Other RDP/VNC servers should have the same kind of setting.
Guacamole gets the video stream from the server,

Do you know if it’s possible to show only one screen at a time ? maybe have a 
button for switching from one to another ?
