In the status bar quite left to the zoom slider are three icons depicting
single page, two pages and book. Klick the single page icon.

Try View > Zoom > 150% (or something like that) 

Also with View > Zoom > Zoom... you can fix the selection to View
Layout Single Page or choose the number of columns (=pages) you want to
see.

said to zoom in back to single page except now it's this really wide
view page.

How do I return the view to one page but not super wide view?
