wrt OpenOffice - apparently their forums and help fairly often helps
LibreOffice users nowadays. When it was under Oracle they had to avoid
being at all helpful to us but even so they often did help as much as they
reasonably could.
So we try to help OpenOffice users here too but there is a potential for
things to work slightly differently in each project so we might not be 100%
correct all the time.

You have written to the LibreOffice users' list asking instead about
OpenOffice - but the answer is probably very similar for both, in fact.
You can toggle the recording of changes in a text document at Edit |
Changes | Record. You can similarly toggle the display of recorded
changes at Edit | Changes | Show. This display, as far as insertions and
deletions are concerned, is very similar to the displays of tracked changes
you describe in Microsoft Word. (I'm not sure what sort of filter you are
trying to avoid, in fact.)
