I've tested it today with iOS 10 and it works. Note that it was only 
search on subject, it was extended today to also search on the From 
field too.

Yes, you're right. I've tested it again.

I assumed that iOS 10 is supporting server based search. In fact, it
does, but only via IMAP, not via ActiveSync. I tested it with an
Office365 account, there it worked neither.

In SOGo 3.2.0 EAS support for server side search was added.
I do not know how good this support is, or which clients are able to use it.

Did you try different email clients?
I assume, you have to activate server side search in the client settings.
