It refers to the HTTP version, see RFC2616

In the response headers.  Should that be 2.0.1 instead or is it  
referring to something other than the version of Varnish?

Torstein -

We have a client who is interested in ESI and also requires gzip (as I
think most would), and we've been working on it on the back burner for a
while. Faster work from us depends on the client's priorities. It's not
a trivial undertaking, but I have at least got to the point of
understanding the ESI request flow enough to guess where the encoding
should probably be performed.

I have the exact same problem, and it comes and goes as it pleases..
I'm testing varnish with different backends (different customers sites in
the same instance) and every once in a while it locks up at the same place
(the X-Forwarded-For header on varnishlog) for any site. Not the others
though, as they are accessible through varnish just fine. And after a while
of working the cache the site that locks up comes back to life.
