Hi, 

There is a free Apple book for using Numbers. You can get it using the Books 
app. It is called "Numbers User Guide for the iPhone by Apple". 

I suspect this book is written for sighted users but there may be enough useful 
info in it to get started with Numbers. There is also a version for the iPad.

I can't comment on Excel on the iphone as I have never tried it. I hope this 
helps.

In my experience, essentially you cannot really work with them on an iPhone.
You can read them, but trying to edit is mind-bogglingly crazy.

I've written o the Accessibility team at Microsoft about the absolutely insane 
amount of extra verbiage you get on an iOS device with Excel.  If I hear the 
font color and size and cell coordinates one more time I'm likely to explode.
Reading excel sheets by opening them through OneDrive  is a reasonable 
experience.
Numbers might have a little less of the extra verbiage, but again, editing is 
not reasonable.  It is far better to stick with a computer if you need to edit 
spreadsheets in my very opinionated opinion.

IF you want to pursue it, I'd check with applevis.com to see if anyone has done 
a tutorial.  www.applevis.com

Or, see if anyone has written a book that might be on National Braille Press, 
www.npb.org
