Though expensive, the KNFB Reader is the most blind friendly and appears to be the best document scanning app currently out. I think there's a great future for this app and the developers have already put out a few updates after the initial release. Check AppleVis for a demonstration podcast recorded back in September for a good overview of how the app works. I am thinking about getting the KNFB Reader myself because I heard it can amongst other things read computer screens at least as well as inaccessible electronic documents such as PDF.
