I have this same problem at least once a day. The ONLY thing that I have found to solve this problem is to completely empty the app switcher on my iPhhone. To empty the app switcher, double click the Home Button. Tap and hold your finger on the screen until you hear VO say editting apps. Double tap to remove each app from the app switcher. It just means the memory in the iOS device needs to be refreshed. Turn the device off and then on again and the email will disappear. Basically, it's an artefact from fragmented memory.
