I wonder how in weather to read the stuff like sunrise, sunset, and the 
barometric pressure, like I have been doing on the bottom of weather.

It has to do with some combination of having Siri or VoiceOver read the alerts 
and not, and I have not settled on a good answer yet.
I have my first gen SE on iOS 15 and got Big Beg, the Westminster clock app 
working, but the notifications keep being read in the notifications and I 
thought I got that stopped, but not yet.
Too bloody many settings ...

I followed your instructions. The good news is I'm hearing the sound that I got 
an email. The bad news is the message is being read. It happens even when the 
phone is locked. How do I stop that, while still having other notifications

In iOS 15, there is another layer to successfully get sound notifications.

Open Settings, Mail.
Double tap on Notifications.
Now, swipe right with one finger until you get to Customize Notifications.
Double tap on that.
Now, you have separate settings for each mail account.
Make sure you have what you want set for the sound here.

You can also get to that screen through the main Settings, Notifications.

Same here, Gera. I even sent one to myself from the computer, another address 
that I don't have on my phone, so sent to the phone. I checked later. The email 
is there, but I got no notification signal that an email came. 

Now, I wonder if that will happen with text messages too?
