Just as a reminder, the Settings app has a search function and I bet if you had 
typed "touch" or "wake" in the search box you would have found that setting 
easily.

It could be a setting called Touch to Wake in the Accessibility/Interaction 
section. If so, then it sounds like a setting on the newer devices without a 
Home button. I had the same thing happen on my XR, where the phone turned on 
every time I touched the screen. I had to call Apple Accessibility about this, 
and they helped me find where to turn it off.
