Here are the steps I used to setup the reminder.

1. Tap on Add Reminder button.
2. Enter name for reminder.
3. Tap the More Details button.
4. Tap on the Remind me on the Day button which by default is off and this 
needs to be on.
5. Locate the date/time, (i.e. Saturday September 29, 2012, 6:00) (swipe to the 
right from the aforementioned button) and tap the date which will now be 
reported by VoiceOver as being selected.
6. NOTE!! I understand the problem now so read this carefully. Once VO reports 
the date as selected, you need to touch the lower 1/3rd of the screen.
You will find the day, hour, and minute pickers. WHen you encounter a picker 
you flick up/down to adjust.
NOTE: I did notice that at least on one occasion if I took focus away from the 
date/time pickers it seemed to revert back to hidden for a lack of a better 
description and I then had to select the current date again.
This was a little random, but generally the pickers seem  to remain.

Hi Scott and others,

Scott's suggestion did the trick for me!  It is certainly confusing and without 
this list I don't know If I would have figured out how to get to the picker to 
change the date and time.

The difference from iOS 5 is that now after tapping on the date you can not 
just flick right several times to the picker.  you must touch the bottom part 
of the screen.  Also if you flick left past the day button and reach the delete 
button the pickers disappear
.  This has confused many of us as I have seen this question emailed to me from 
non list members using the podcast on Applevis.com. 

thanks Scott for finding a solution.  Until this is fixed I suspect many Voice 
Over users new to the app will not figure it out and likely give up on the app. 
 I know I almost gave up on it  under iOS 5 and it was easier to find the 
pickers then.

emails from users of the Reminders app in iOS 6.0 who cant get the picker item 
for the date and time to come up at all or can't get it to come up consistently.

I'm using a 4 S and I also can't get the picker to come up consistently.  It

Double tap on the title, then double tap on the date. The picker will show up 
in the lower left area of the screen. At least it works for me.

I always use Siri  to schedule a reminder.  It seems to work fine.  I say:
set a reminder for ... date, time and subject of reminder and I've had no
problem.  I haven't asked for a reminder for more than a day ahead though so
can't speak to that.

 I hope I'm just missing something and there is a simple solution.

 The procedure has not changed from the previous IOS version. I will
 delineate the steps involved in manually inputting a reminder. I believe
 there is a podcast on this from Applevis. 
 
 1. Open the Reminders app and double-tap on show list to select the folder
 you want the reminder to be placed in. 
 2. Double-tap on add, which is located in the upper right corner. 
 3. Flick to the right until you hear the text edit field and double-tap on
 that. Input whatever the reminder text should be. You may not have to
 double-tap on the edit field. 
 4. Double-tap on the done button located in the upper right corner. This
 will bring you back to the first screen. 
 5. Find the newly created reminder and double-tap on it. This will open the
 details screen. 
 6. Under the reminder  text, there will be 2 options; one for day and one
 for location. Double-tap on the one that meets the reminder text criteria.
 In  the case of being reminded on a day, double-tap on Remind me on a day.
 These are toggle buttons. 
 7. When the date is shown, it is the current date and time. Double-tap on
 the current date field. This will place the date at the bottom where you are
 able to use the picker to change the date, and  time. 
 8. When you are finish, double-tap the done button located in the upper
 right hand corner.
