They don't set up the phone. All they do is put a simm card with your
phone information on it. So when you turn it on you still need to
enter your id and password and set up the phone.
As far as restoring from backup, before you restore your phone, try
going to settings, iCloud and entering your user name and password. It
may restore your phone.

Hi,
Here’s what you do.
Turn on the new phone, and run through the first part of the Setup Assistant. 
Once you connect to your Wi-Fi network, there is an option to restore from an 
iCloud backup. It’s really easy, and everything is pretty much explained 
onscreen.

 Wow thanks for these tips, fo for when I get mine in a few weeks, I'll 
know what to do to restore. I would have thought i'd have to go to 
Settings/General/Restore, but maybe there's another way?
