I recommend the Sennheiser Ambeo Smart Headset for 3D sound on iOS devices. I‘m 
running these binaural mics with my iPhone as they plug in directly via 
lightning connector and the sound of the recording is just great and of high 
quality! I‘m sure you will get amazing results while riding and your hands stay 
free to use as the mics are being attached to your ears.

Try the Rode SC6l interview kit. I don't know how well they work for long-range 
distance, but the sound is great up close if you clip one to either side of 
your shirt collar. I got this set from
