Not an app, but works like one on a remote page, minimalist code, so no real 
issue with data plan.

There is a dice amongst that;  as complicated as you like, but default is two 
dice of 1-6, the normal ones.

Hello,
Would something like dice world not be good? You could play against your 
children, and even friends, given that they have it installed. You would have 
to most likely install it on more than one device, though.

games with some of my younger children they’ve identified that Daddy is blind,

You may also want to look at an app called Dicetray. It works quite
well with Voiceover and it's easy to add dice to your tray. They are
labelled well and you merely have to select the die needed. There is
also a tab for single rolls of various dice.
