Mirroring the iPhone sadly has nothing to do with deleting text messages. Theoretically, if you are set up properly in iCloud on both the phone and the watch, it should behave the way you want. I personally do not bother with text messages on my watch, so beyond the theory, I cannot help. However, 877-204-3930 Apple Accessibility very likely could answer this in fairly short order. I looked at the choices under notifications in the watch app, and the way I read things, you are given the opportunity to choose which apps' notifications appear on both devices. Mirroring apparently means allowing the notifications to appear on both devices, but this does not mean that clearing a notification from one device will remove it from the other.
