No, you cannot end calls with Siri or Voice Control.
Another thing to constantly request from Apple.

Audio routing's supposed to allow you to choose how to answer your phone, 
automatic, Speaker or headset.  But it seems to have disappeared.  It used to

Well, I have my phone set to automatic, and if the bluetooth earpiece is on, I 
can answer with them.
Are you leaving your bluetooth headset on all the time?
Is it perhaps going to sleep?

Audio routing's supposed to allow you to choose how to answer your phone, 
automatic, Speaker or headset.  But it seems to have disappeared.  It used to 
be in accessibility.  But now, I can't find it anywhere.

It is in Settings > Accessibility > Touch > Call Audio Routing
I can only repeat the advice to take advantage of the search feature in 
Settings.
When I went into Settings > Accessibility this also didn't stand out for me 
right away.
Then I simply entered "answer" into the search field because I know that one 
item I was looking for was "auto answer calls" and the only result was the 
correct one, it shows the actual setting and you can double tap on it and it 
will take you there, but if you swipe past it, it will also give you the exact 
location the way I wrote it down above, i.e. it will tell you to look in 
Settings, Accessibility, Touch, Call Audio Routing.
