Thank you to those who responded to this problem.

I found the Epson Printer Utility in the Applications folder but not in the
library nor was I able to Configure it when selecting the Printer in the
Print Centre.

But now I have it. Thanks again.

Open Print Center and select your printer then click Configure in the 
Toolbar.  When you click OK in the dialog which comes up the Epson 
tools should appear, at least they do for my SP720 and SP1290.  This 
assumes you have installed the OSX Epson software of course.

Under OS 9 when I chose Print the Epson dialogue box came up. This included
the tools to check on ink levels and to check for, and correct, errors.

Now under OSX the Print Centre takes over and that helpful Epson dialogue
box does not appear.

Is there any way of accessing it again?  Or do I have to install the Epson
drivers into my Classic extensions and print from that OS?

the Epson Print Utility still exists and functions under OS X [but not 
if you are using a networked USB connection through Airport :-( ]

the utility lives in the library>printers>Epson>utilities
