OK. It's all under the View menu. Yours certainly looks strange!!!!
I recreated your symptoms, then I had to spend a while getting back to
normal!
In the View/Layout sub-menu, you need to have Folder Pane and Message
Pane ticked. These items appear only to be active when you are in the Inbox.
This will get you back to a normal looking mailbox view. You can then
play around with the other View/ Layout options...
