Been running weewx on a rpi for almost 7 days now and had my first total 
crash today.

Its not the first time my rpi crashes. It always did (after some days/weeks 
and almost always after a power break) that when I started using it, and 
that is also why I decided not to use it.
Have ordered a new SD-card, will see if that helps. rpi and weewx is a 
great partnership so hopefully it will work.

My rpi is one of the first versions.

whenever I do an apt-get update to the next time (I always reboot 
after doing an upgrade because that's one of the times weewx crapped 
out, when I updated some system stuff).

A few days later I'll also endorse the Raspberry Pi 3.  I've been running 
WeeWX on it for a year and haven't had any outages that weren't my own 
fault.

Given the cost and resource use, you really con't go wrong with a RPi. I am 
using a 3b. So cheap, and easy, and weewx installs and runs perfectly.

Something's wrong. Have you checked the system logs?

I've been running WeeWX on a Raspberry Pi Model B with 512Mb RAM for 3 
years with just a handful of outages, all of which were either 
power-related or the result of the notorious Fine Offset WH1080 USB port 
lock-up. I send logs to a Synology diskstation and minimise disk writes 
using ram storage. Have never had any SD card issues with it either.

The Beagle Bone is a great little board and more capable than a Pi; unless 
it's faulty it really should be good enough.

I have been running weewx on a pi zero w(ireless) for a few months now.  It 
just pushes the data to weather underground every 5 minutes and I don't run 
a web server on it.

Personally I'd be checking on what is causing the 'freezing' because, if it 
is something like running out of space for the ram-disk based log files (as 
happened to me once), or the lack of space on the SD card (not necessarily 
from WeeWx itself but from other files being written) or even a failure 
with the SD card (a portion that is not written to for about a month after 
the boot) then those might well be transferred to the new device.

Low-powered boxes, in increasing price order:

For the money, the RPi is hard to beat.

Next up would be an entry-level Intel NUC. These can be as inexpensive as
$130, plus RAM and a disk. Both Vince and I have bought these and they have
proven quite reliable. Has a fan that occasionally goes on. If you get a
powerful enough one, they can easily be run as a workstation.

Another inexpensive low-powered box I've had good luck with are the MiniBox
"value systems ." I have on
that has been running continuously for about 5 years with no problems.

If you're willing to spend more, I can recommend CompuLab's "Fit-PC"
 series. They are extremely rugged and
dependable. Dead silent (no fan!). About 5 watts total power consumption.
They are built to industrial standards: I bought a fit-PC Slim in 2008, and
it has been running 7x24 ever since with absolutely no problems. Their "
fitlet2 " is probably the best
deal right now, about $315, plus RAM and a disk.

I use repurposed thin clients, e.g. HP T5740 with a small SATA SSD - intel Atom 
CPU, 2gb RAM plus it’s fanless and consumes about 10 Watts.
Find them cheap on that famous auction site!

Nothing wrong with a pi, within the pi's limitations.  Definitely spend the 
extra few bucks on a good+fast class-10 SD card and get a pi3.  UPS is 
always goodness if you can do that too, just in case.  The pi can be a 
little finicky re: power.
