There's also GStreamer which would allow you to build a custom audio
pipeline. Something like:
alsasrc -> deinterleave (to multiple mono's) -> interleave (mono pairs
to stereo) -> encodebin/standalone encoders/muxers -> multifilesink
(splits output into multiple sequential files).
