I have this:

When I send a virus to one of my other accounts, I get a recipient

No need to set these if $final_*_destiny is D_BOUNCE. D_BOUNCE triggers
sender notification. These

Agreed, but you are talking about the sa-learn and spamassassin
commands and how they affect the Bayes database. This is not influenced
by amavisd-new.
