I think you've either misunderstood the guidance given on the postfix list.
Your question was interpreted as to how save mail in some variable fashion
based upon recipient address.  If all you want is to save all email to a
single directory, read on.

If your always_bcc email address is a local address, and you are using
Maildir formats (see home_mailbox in man 5 postconf), mail will be saved to
the <always_bcc_addr>/Maildir directory by default.

If your always_bcc email address is a virtual mailbox, search for Maildir in
