I forgot to mention how I solved my problem:

Setting the $sa_spam_subject_tag _does_ work, too,
so that I don't have to use the *_maps variable.
But it only works if used correctly (as always :-)

GOOD: $sa_spam_subject_tag = '***SPAM***(_SCORE_)*** ';
BAD:  $sa_spam_subject_tag = '***SPAM***(_SCORE_(00)_)*** ';

Doh!
