Thanks for that.
Interestingly the certs directory was not actually there. I must have
accidentally deleted it. Once I created it and restarted XMPP all was fine.
Do you think its worth checking that the certs directory is there and creating
it if not?

Im also assuming that this problem could also be fixed by increasing the size
of /var and/or /tmp if you have a bit more RAM.
I push mine out to 500M and 100M respectively in user.conf as I have 2G
VAR_SIZE="50k"
TMP_SIZE="10k"
