Locking is not done from the Dispatch form - it is done from the production
order itself. Once locked on the order, a message is thrown if you attempt to
re-schedule the order. (I haven't identified a way to just lock one job on an
order).

Once a production item is transacted, there is no way to change the item
type. Your best bet will be to go to inventory management>Items> References
tab and check the Bom Calculation - Stop Explosion checkbox (to bypass the
BOM calculating the cost) and Item Coverage - Stop Explosion chec
