First of all I suggest trying to use $Conf{BackupFilesOnly} and/or
$Conf{BackupFilesExclude} to see if you can back up just a few (er, a
few tens of thousands:) of the files in a reasonable time.  Obviously
I know nothing about the way the files are used/modified.  Would it be
out of the question to back up something like 1% of the files per day,
i.e. have a rotation period of three months?

How would you suggest I go about collecting more info?

To see more log information increase the value of $Conf{XferLogLevel}.
