Two of the main file servers are windows based so I think that I will
use the bacula client vss support to freeze the data for those two severs.

I am looking at moving towards virtual full backups as a way to cut down
on our backup times. The situation is that our full backups on several
of our file servers are running over their window. My question is what
could the draw backs be to moving towards virtual full backups?

You can use execute diskshadow (which is built into server 2008) before
the backup to make a shadow copy of the drive. Once the backup is
complete and shadow is deleted the logs will truncate.
