I'm a bit behind on my opensync mailing list mail, but I did hear
about a recent bug found in the evolution plugin. I haven't had
time to reproduce it, but hope to soon.
The bug I heard about was when deleting entries from Evolution,
but that sounds different from your issue.

I have an issue with the plugin opensync.
If I update / modify a contact in my address book from Evolution. The
contact isn't detected as modified... so at the next sync, nothing
happens.
I think that the bug is into the opensync-evolution-plugin or evolution
itself...
