I'm not familiar with Exchange but if it speaks SMTP, you should be able
to use a module such as Mail::Sendmail or the newer Email::Send module
to talk to it. What formmail script are you using to process your forms?
I'd recommend the nms scripts[1].

We recently brought our own WindowsXP/Apache server online to host our site.
However, we do not have a mail server to use for our forms, unless I it's
possible to use my Exchange server somehow. Is there a 3rd party I can use
to send mail for my forms.

HTTP header, I imagine. There is a section in the CGI documentation
about generating these headers.
