Is is possible for the windows SqueezePlay app to control a hardware
player...just like a "real" SqueezePlay hardware client (i.e.
SBController, SBTouch) can? I don't see a "Select Player" menu item
anywhere.

In SqueezePlay I have a 'Choose Player' menu item in Settings, same as
on the Touch.

Why would a UNC path for a cover permit the generation of some sizes of
artwork thumbnails but not others?

yes this will work. I use SP on my laptop to control all the players at
my house. You may have to go to Settings > HOME MENU then tick the box
next to choose player. This will put it on
Good news - OK to date. But how do I now revert to a stable setup?

It should be stable... But you could reinstall the standard firmware to
revert to the standard setup.
