It seems to me you can just use another template. You can write a citation template in the template editor. It does not allow you to export as .doc, but you can either create a .doc template and simply paste the result of a plain text template in it, or you could convert a rich text

The Single Column was the hint I was looking for. It's not quite the same as what we had (which was basically a Mac Preview window where I could read the whole pdf if I was so motivated), but this is good enough, and matches more with what BibDesk is (i.e. not a file reader!) Thanks!
