Well it all works now, it seems GTK+ 2.6.4 fixed the issue
Firstly,
I moved to Evolution 2.0.4 but first had to upgrade the following dependancies:
gal-2.2.5
libsoup-2.2.2
evolution-data-server-1.0.4
gtkhtml-3.2.5
All the above went in with no problems. I then deleted all my .evolution settings that were hanging around and started evolution. But the same issue at exactly the same place occurred.
Secondly I downloaded GTK+ 2.6.4 and installed this - again no issues cropped up
Now at this stage I thought I would try and get as much info as possible in place so I started evolution using the following syntax: CAMEL_DEBUG=all E2K_DEBUG=5 evolution
But it worked so all the debug that flew past was wasted.
So onwards with evolution and see if I am tempted away from thunderbird

What version of gtk+-2?
I've heard of issues of this with older versions of gtk+. I can confirm that evolution-2.0.4 does not lock up like this (using gtk+-2.6.2).
A friend asked me about this exact same issue earlier today. Using the same version that you are trying. He told me it was a gconf issue, but I don't think he was right--if gconf wasn't working, then no gnome app would work.
If the problem persists, use strace to find out where it hangs.
BTW, does evolution freeze? Or does your entire system freeze?
