COCONUT AND LIME SYRUP CAKE

1/2 cup (1 stick) butter, softened
1 cup granulated sugar
4 large eggs, at room temperature
1 teaspoon baking powder
1/4 teaspoon salt
2 cups shredded coconut
1 cup all-purpose flour

LIME SYRUP
1 cup granulated sugar
1/3 cup water
1/3 cup fresh lime juice

Preheat the oven to 325° . Butter and flour a l0-inch tube pan .. Beat the 
butter and sugar in a large bowl with an electric mixer at medium speed 
until creamy .. Add the eggs, one at a time, until just blended after each 
addition. Beat in the baking powder and salt. . With mixer at low speed, 
gradually beat in the coconut and flour .. Spoon the batter into the 
prepared pan .. Bake for 40-50 minutes, or until a toothpick inserted into 
the center comes out clean .. Cool the cake in the pan for 10 minutes. Iurn 
out onto a rack to cool. . Lime Syrup: Stir the sugar, water, and lime juice 
in a small saucepan over medium heat until the sugar has dissolved. Bring to 
a boil, without stirring, for 3 minutes .. Place the cake on the rack on a 
jelly-roll pan. Poke holes all over the cake. Pour the syrup over the top. 
Scoop any syrup from the pan and drizzle over the cake.
