MAPLE SYRUP-SOAKED CAKE
(With Maple-Lemon Glaze)


1/2 c. sugar
1/2 c. butter or margarine
2 eggs
3/4 c. maple syrup
2 1/4 c. flour
2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1/2 c. milk

Glaze:
1/4 c. maple syrup
2 Tbsp. lemon juice

In bowl, cream sugar and butter until light and fluffy.
Add eggs (1 at a time), beating well after each addition.
Blend in maple syrup. Stir together flour, baking powder, salt
and soda; add to creamed mixture alternately with milk; beat
until blended. Pour into greased and floured 6-cup tube pan.
Bake at 350 degrees for 45 to 50 minutes. Cool in pan 10 minutes.
Remove from pan; place on wire rack with waxed paper
underneath. While cake is still warm, prick with long-tined
fork.
In a small bowl, combine the ingredients for the glaze.
Spoon over cake.
