the green stuff is called Wasabi, it's a variety of
horseradish and (as you know) very hot.
The rice is a medium-grain rice and yes, it sticks
together. And yes it's steamed. They may flavor it with
I think lemon grass. Not sure.
The white, transparent rolls are made with rice flour
All this talk about food is getting me hungry :-)
I don't particularly liek Sushi though. I had bits and pieces of it once. I
think I even ate 'octopus'?
And was duped into eating the extremely hot green paste?

How are you cooking your rice? It's usually that the rice isn't sticky enough when
that has happened to me. Sometimes I just pop by a Japanese place and buy the sticky
rice if I'm short on time or don't feel like dealing with that part.

Make your rice sticky and make sure to add sugar and vinegar. Then, roll tightly!
You can get the bamboo mat that is used for rolling sushi. I've done it (even
withouth the mat) and it works fine..
