You might be using the wrong kind of rice...we get ours from an Asian grocer. You can sometimes find imported short grain rice in the supermarket as well. Domestic rice is made to be as least sticky as possible because the majority of Americans are fixated on rice that doesn't stick. I prefer

Hi Gel- the green stuff is called Wasabi, it's a variety of horseradish and (as you know) very hot. The rice is a medium-grain rice and yes, it sticks together. And yes it's steamed. They may flavor it with I think lemon grass. Not sure. The white, transparent rolls are made with rice flour
