.. How is an email header that anyone can read off of the email more secure
than the IP address of the CF Server? Or does iMail allow you to strip the
header before it goes out?

I use imail7 on my mail server and it is easy enough to allow relaying via
CFMAIL. It is done via custom header as opposed to the less secure IP
number..
I have another server that runs on Linux/Sendmail, however it also is set up
to require SMTP-AUTH as do most mail servers.
The reason for this
