In pure HTML you would use the "accesskey" and "tabindex" attributes of form elements to allow simplistic keyboard management of forms.  I'm not sure what's available in XFORMs yet, but I have to assume it's more advanced. Using script you can take things to the next level.  The event bubbling mod
