Adam, I've run into the same problem.  Verity will index a .PDF, and it will not show a summary, nor return it in a search unless a blank strin is passed to the search.  Usually the culprit is a .PDF which was created out of an image (and does not contain any actual text).  Though, you say you can

Has anyone ever had a PDF with 'selectable text' that verity will show as being indexed, but won't return in the results when searched for?
