Because I'm creating a VoIP course for a community college, I have been going through several books (mostly from Cisco Press). One book that really stood out was "Carrier Grade Voice Over IP" by Daniel Collins, published by McGraw-Hill. It is not the most technical (read the specs or RFCs if you can't fall asleep at night), and the graphics look a bit cheesy. I like it because the author digs into all technical areas of VoIP and actually makes me want to keep on reading.
VoIP crosses over both telco & networking fields. It is hard to encounter good writers who knows both fields well. If I needed to pick a textbook for my class, this would be it.
