I have been told that the reason we are hearing echo on our phones on internal phone calls (ip phone to ip phone) is that the ip phones processor is getting overloaded. That the echo is really coming from the phone itself. I have limited knowledge on this subject so any help or suggestions on

Echo on a digital phone (analog for that matter as well) is usually intentionally created, but it shouldn't be noticeable. It's called comfort noise, so that you can hear yourself talking in the earpiece. Tests have shown that people who can't hear themselves in the earpiece think it's broken.
