Does anyone know if there is a doc for the setup of disk/volumes for deploying
ESXi on UCS.
I have a Webex on-premises on a C220-M3 but can't find any info.

The OVA templates will give you the correct amount of disk for the VMs.
If you are talking about the disk size for the actual ESXi host have a look
