Koen, CoreData for iOS and Mac are mostly the same, but the biggest difference is that iOS doesn't support bindings. Bindings are important and for that reason I don't think that an iOS Core Data book would be sufficient for you. I recommend Cocoa Programming: A Quick-Start Guide for
