Do you have them at your house? Can you cook them to see if the flavor and
texture are different?

Waxy proso may also be a fantastic IQF grain to be mixed in with rice for
foodservice etc.

I wonder if it is possible to make a lower flavor profile version of it
that would be a little more approachable by the American pallet? People are
always looking for new spirits and I tried some fantastic sorghum vodkas
and whiskey down in TX last fall.
