Good luck with your classes!  We have an ongoing schedule, posted at our
website, www.wasatchgardens.org
Novel topics are usually a big hit. (Last year we did a class on Urban
Chickens that drew about 40 people.)
We also go for the fundamental topics in organic gardening that aren't
already as available in the community.  Composting is always a popular one.
It can work great to partner with outside presenters and other organizations
for classes as well. (Be sure to tell people about your garden and programs
at the beginning of the class.)
My main advice: Use the garden as much as possible for hands-on learning!
That's the real added value of teaching in the garden!
