Alan,

Yes, the SE is one of the few Macs that can recognize three floppy drives,
total.   I've tried this myself.

I really wouldn't chance operating the SE without a fan.   Adding extra air
vents might help, but I think after some of the heat-buildup problems and
failures surfaced with the Mac Plus, the designers realized a fan was very
important for basic cooling.

At the very least, lack of a fan would probably severely limit the life of
the ol' SE.   :-)    YMMV.
