21-Alarm Chili

 

Ingredients:

 

1 pound extra-lean ground beef

1 medium onion, chopped fine

3 cloves garlic, finely chopped

1 large green pepper, cut into 1/2-inch slices

2 cans (28 ounces) crushed tomatoes

2 teaspoons oregano

2 teaspoons cumin

3 tablespoons chili powder

2 tablespoons unsweetened cocoa powder

2 teaspoons sugar

1 teaspoon crushed hot pepper

1 teaspoon Tabasco sauce

1 can (15 ounces) kidney beans, rinsed in strainer

 

Directions:

 

1. In a 2-1/2-quart saucepan, cook meat over medium heat until well done, about 
6 to 8 minutes, stirring frequently to crumble meat.

2. Pour off fat.

3. With a slotted spoon, transfer meat to paper towels to absorb extra fat and 
wipe remaining residue from saucepan.

4. In the same pot, sauté onion, garlic, green pepper and 1/2 cup crushed 
tomatoes 

for 3 minutes.

5. Add oregano, cumin, chili powder, cocoa powder, sugar, hot pepper and 
Tabasco sauce and continue cooking for 3 minutes more.

6. Add beans, meat and remaining crushed tomatoes and cook together for 25 
minutes over low heat.

7. Makes 8 servings.
