Apple-Chip Cookies
 
1/2 cup butter or margarine, softened
1 cup sugar
1 egg
1-1/2 cups flour
1 tsp. ground ginger
1/2 tsp. baking soda
1 cup peeled, cored, grated apple (1 medium apple)
1 cup semi-sweet chocolate chips
1/2 cup quick-cooking rolled oats
     Preheat oven to 350. Grease (or parchment paper line) cookie sheets. In a 
large bowl, cream butter and sugar. Beat in egg. In another bowl, sift together
the flour, ginger, and baking soda. Stir into butter mixture. Stir in apple, 
chocolate chips, and oats. Drop by rounded teaspoonfuls onto cookie sheets.
Bake 15 minutes. Store in  an airtight container.
Makes about 4 dozen cookies.
