Breakfast Bruschetta

 

Ingredients

 

6 large egg whites

3 large eggs

1 medium onion, chopped

1 large tomato, beefsteak, seeded and chopped

1/4 cup basil, chopped

1/8 tsp table salt, or to taste

1/8 tsp black pepper, or to taste

6 slice high-fiber bread, toasted and cut diagonally into 4 pieces each

 

Instructions

 

1. With a fork, lightly beat egg whites and eggs.

2. In a large skillet coated with cooking spray, sauté onion over medium heat, 
stirring frequently, until it starts to turn golden, about 5 minutes.

3. Add tomatoes and cook 1 minute more.

4. Add eggs and scramble until cooked, about 2 minutes. 

5. Add half the basil and season with salt and pepper.

6. Top toast with egg mixture and sprinkle each with remaining basil. 

7. Serve immediately.
